Go for realm first cooking. Honestly, it will basically come down to who logs in first, assuming you have the materials ready.
-How prepared are you for this patch?
I'm not too big in speculation and stockpiling so being prepared means something else. I'm prepared to leveling my professions fairly fast and have the gold to buy my way to 525 on multiple professions. I'm ready to level at a decent pace with flasks and other consumables at hand. Switch to leveling spec and some glyphs around to be focused on minimizing down time.

A simple yet highly profitable tip is: Sell all your Cataclysm materials for insane prices. The market will most likely never bee this good on these items as it is now. Find those that are going for realm first cook and sell them your cooking mats. Since I'm going for it, I've paid up to 500g per piece of meat. That comes out to 10k gold a stack. Very few things will ever sell for that much, so cash in now especially if you are hoarding mats for your own professions. Profit from a stack now can buy multiple stacks a few weeks down the line.
-How much gold are you going into Cataclysm with?
I've spent a lot of it in Wrath and after that 100k mistake, I'll be going into Cataclysm with about 100k. Not a whole lot but enough to be one of the first people to max a few professions with hopes of high profits shortly after.
-How much is your inventory/stockpile worth? Any noteworthy items?
Like I said before, I don't stockpile much or even give speculative advice. However I did buy up some dirt cheap leatherworking mats, some below vendor cost. Plan B would be to vendor to break even or craft BC/Wotlk items that still will still sell in the new expansion.
